67% Cabernet Sauvignon
Vintage 2007 was the earliest harvest on record, producing brilliant ripe Cabernet Sauvignon and succulent blends. Hot weather during flowering and early development led to early picking dates, however a moderation of temperature in late February to March created ideal conditions for red grapes. Further, our south facing slopes tend to ripen a week or two later than our neighbours and hold greater acid levels, meaning a year like 2007 provides wines of great ripeness combined with great natural acid levels.
Our 2007 ‘Margaret’ was handpicked in mid March from our original south facing planting of Merlot and Malbec and the best parcel of our north-east facing planting of Cabernet Sauvignon. The best barrels from our west facing slopes of Merlot and Malbec were also included in the blend.
Our 2007 ‘Margaret’ is a blend of 67% Cabernet Sauvignon, 17% Merlot and 16% Malbec. The wine has spent 18 months in French oak barrels, of which two thirds were new and the remainder one year old.
Intense deep crimson colour, the nose of this wine shows rich briar cedar aromatics with hints of cassis and blackcurrant. The palate is rich, even, and seamless with powerful blackcurrant flavours. The wine shows great balance and richness, great acidity and long ripe tannins.
A gold medal winner at this year’s Margaret River Wine Show, we consider our 2007 ‘Margaret’ to be our best yet! This wine will be best enjoyed from 2015 -2020.
