2007 Cabernet Sauvignon ‘Nicolas’

Each year our Cabernet Sauvignon is named after a family member or family friend. For 2007 our Cabernet Sauvignon is named “Nicolas”.

 

Our Cabernet Sauvignon is sourced from our original plantings of Cabernet Sauvignon on our south facing slope. The soil profile on our 1973 plot is composed of sandy loam over gravel and clay, and produces very fine wines with silky tannins. The 1975 plot, located between our Cabernet Franc and Merlot plots, has significantly more gravel in its soil, and produces more powerful aromatic wines. Our plots of Cabernet Sauvignon further down the slope produce well structured wines, but are not as aromatic as the plots located further up.

 

2007 was a very warm vintage which saw the earliest picking dates seen at Woodlands. The warm dry conditions were perfect for the late ripening Cabernet Sauvignon vines, although the yields were an extremely low 1.6 tonnes per acre.

 

In 2007 we chose to depart from our usual winemaking process for our Cabernet Sauvignon. Over the last four years we have fermented the different plots of Cabernet Sauvignon separately. We found that some plots produce more aromatic ferments, while others were more structured. In 2007 we fermented the “aromatic” batches in small open fermenters to enhance their aromatics. The “structured” batches were fermented in small closed fermenters, where they remained on skins for 45 days following fermentation. We hoped that this process would enable us to get the best of both worlds – a wine that retains vibrant aromatic fruit characters whilst gaining structure and weight. After 12 months we combined the best barrels of each batch, and determined the final blend. In total, this wine remained in new French oak for 21 months.

 

This wine is a blend of 95% Cabernet Sauvignon, 4% Malbec and 1% Cabernet Franc. The colour is a deep crimson. The nose reveals cassis, mulberry, blackcurrant, violet and toasty French oak notes. The palate shows deep brooding characters of blackberry, mulberry and briar patch.   The wine finishes with a powerful array of rich fruit characters and long grained tannins. Our 2007 Cabernet Sauvignon is a very focussed wine at this stage, and will require considerable time to broaden and develop.

 

We believe that this wine reflects its site and vintage very well, and will be best enjoyed from 2017.
