2005 Cabernet Sauvignon ‘Colin’

This wine is a blend of 95% Cabernet Sauvignon, 4% Malbec and 1% Cabernet Franc.

 

Each year our Cabernet Sauvignon is named after a family member or family friend. For 2005 our Cabernet Sauvignon is named ‘Colin’.

 

2005 was a near perfect growing season, although patches of rain late in the season may cause variability in some Margaret River reds.  At Woodlands we were able to get all our fruit off just before the rain hit, resulting in very intense perfumed wines with excellent tannin ripeness.

 

Our 2005 Cabernet Sauvignon is a blend of 95% Cabernet Sauvignon, 4% Malbec and 1% Cabernet Franc. Picked in early April, the parcels of fruit for our Cabernet Sauvignon were crushed into small open fermentors. The wine was fermented at temperatures ranging from 18 to 24 degrees Celsius, and was pumped over four times a day. Near the end of primary fermentation, the wine was pressed and transferred into new French oak barrels to complete primary fermentation in barrel.

 

Following primary fermentation, the wine was racked and returned to oak where it underwent malolactic fermentation. When the wine had completed malolactic fermentation, the wine was racked again and transferred back into barrel. Our 2005 Cabernet Sauvignon remained in new French oak for a total of 22 months.

 

Destined for a great future in the cellar, our 2005 Cabernet Sauvignon will be best enjoyed from 2017 to 2035.
