2012 was a classic vintage for Wilyabrup, consisting of perfect ripening conditions – rarely too hot nor too cold, and with consistent dry weather up to the end of April. The relatively cool February enabled the white wines to develop terrific flavour at lower sugar levels.
Our “Chloe” is produced from a two-acre plot located at the north-east corner of the Woodlands Vineyard. The plot lies at the top of a south facing slope where the soil is composed of deep loam topsoil over clay. This plot is the most shaded location on our vineyard- protected on the west, north and east with marri and peppermint trees.
The ‘Chloe’ Chardonnay plot was hand picked on the 27th of February at just over 12 Baumé. It was great to see the fruit bursting with flavour at such a low sugar level!
Once the fruit was pressed and settled for 7 days, the clear juice was transferred into French barrels, of which one third were new. Fermentation proceeded quickly and cleanly. Following fermentation the wine remained in barrel, with the lees stirred once a month. This wine was bottled in January 2013 after 11 months in barrel.
The colour of our 2011 Chloe is an intense golden straw. The nose is quite deep and brooding – showing struck match, toasted cashew and stone fruits. The palate is tightly coiled and mineral, displaying a range of flavours mirroring the nose, as well as complex barrel ferment notes and bright acidity.
This wine is bottled in Stelvin and will be best enjoyed from 2017 to 2023.
