68% Cabernet Sauvignon
Our 2004 ‘Margaret’ was hand picked in mid – March from our original south facing planting of Merlot and Malbec and the best parcel of our north-east facing planting of Cabernet Sauvignon. 2004 was a fantastic sunny vintage; our Cabernet Sauvignon yielded 2.8 tonnes per acre, while our Merlot and Malbec yielded 2.2 tonnes per acre.
After harvest, the Merlot and Malbec portion was crushed into small open fermentors. The Cabernet Sauvignon portion of this wine was crushed into small closed fermentors. The wine was fermented at temperatures ranging from 20 to 24 degrees Celsius, and was pumped over four times a day. Near the end of fermentation, the wine was pressed and transferred into French oak barrels to complete primary fermentation in barrel.
Following primary fermentation, the wine was racked and returned to oak where it underwent malolactic fermentation. After which the wine was racked again and transferred back into barrel. Our 2004 ‘Margaret’ remained in oak for a total of 18 months, of which 32% was new, 26% was one year old and 42% was two years old.
Our 2004 ‘Margaret’ is a blend of 68% Cabernet Sauvignon, 18% Merlot and 14% Malbec. The key words to describe this wine are rich and balanced. The colour is an inky purple. The nose shows lifted classic Margaret River Cabernet character interlaced with mint, blackberry, mulberry and cedary oak. The palate’s primary characters mirror those of the nose. This wine has great texture and mouth feel, and finishes long and balanced with 2004’s characteristic fine powdery tannins.
This wine has been bottled in Stelvin. Peak drinking from 2010-2020, with the potential to cellar till 2022.
