Our 2000 'Margaret' Cabernet Merlot was picked in mid March from our south facing planting of Cabernet Sauvignon, Merlot and Malbec.
The fruit was crushed into a small closed fermentor where it underwent fermentation at temperatures ranging from 22 to 28 degrees Celsius.
Following fermentation our Margaret spent 18 months in French oak barriques of which 33% were new.
This wine is showing some development in the colour and nose. A lifted slightly herbatious minty character dominates the wine at this stage. After opening up the wine showed nice minerality and very earthy gravelly tannins. Drink
