Our 1983 Cabernet Sauvignon was picked in mid February from our south facing planting of Cabernet Sauvignon and Malbec.
The fruit was crushed into one tonne concrete fermentors and fermented at temperatures ranging from 22 to 28 degrees Celsius.
Following fermentation our 'Elizabeth' spent 21 months in new French oak barriques.
Our 'Elizabeth' shows classic Margaret River mint, cassis and fine grained French oak on the nose. The palate follows the nose, finishing cool, long and elegant. A superb Bordeaux style wine.
Last tasted 20 November 2005.
